I like to make this at the beginning of the week, so I have something to snack on when I want something quick and healthy. It is perfect with seeded crackers or veggies, or even spread on sandwiches!

I love guacamole and avocados in any form. But organic avocados can get a bit spendy when you buy a bunch to make something with. One really good solution…adding green peas to it to not only extend the guacamole, but also add some protein and keep it green as well (this guac doesn’t discolor as bad as the regular stuff). This is delicious, and easy to make if you have a blender or food processor. Not only that, peas are in season now that it is Spring, so it is the perfect time of the year to enjoy them!
