Festive Baked Vegan Mozzarella

Baked Brie en croute is a popular appetizer for the holidays, so I decided to make a veganized version of it using Miyoko’s vegan mozzarella, which is really delicious on its own so I knew it would be good in this dish. I wrapped it and some raspberry jam in filo dough brushed with avocado oil, which has a buttery flavor, and it was really delicious!  You would never guess it was vegan and it would be perfect for serving for Holiday parties!

I am a big fan of fried cauliflower, so I thought why not try broccoli as well!  However, I like to make it healthier than frying it in a bunch of oil, so I bake mine instead and it still comes out nice and crispy!  I serve it here with a lemon tahini dipping sauce and it is so delicious!  Not only that, you get your daily fiber and a satisfying snack all in one!

This holiday season let’s spread holiday cheer by creating a wow-worthy charcuterie board when entertaining! Here are some tips and tricks to create one effortlessly:

1 Variety of Selection

Select special ingredients to elevate your charcuterie board like Merlot Bellavitano Cheese or a variety of season nuts, herbs, and fruits for garnishing.

Spicy Beet and Carrot Fries with Lemon Tahini Dipping Sauce

Everyone loves french fries, but did you know you can make delicious fries out of other veggies too?  I like root vegetable fries because they are packed with nutrients, they are healthier than traditional fries and they are so pretty!  The ones I am sharing with you today are actually baked as well so they have much less fat than traditional fries and they pack more fiber since I am using beets and carrots instead of potatoes.  These are easy to make and so good, and I pair them with a simple lemon tahini sauce.  These are perfect as a side dish, or as an appetizer or snack.  Give this Spring twist on fries a try next time you are craving them!
