Minted Pea Hummus

Hummus is a staple in my refrigerator.  I can use it as a dip for veggies or spread it on crackers for a snack, or use it as a sandwich spread or pizza topper.  I like to make my hummus according to what is in season as well.  I know chickpea hummus is classic, and I love it, but for Spring, I made a minted pea hummus that was delicious, and refreshing. Peas actually contain quite a bit of protein as well, so this is a substantial snack.  It is super easy to make as well, just throw all of the ingredients in the blender, blend until smooth and voila!  Delicious beautifully colored nutritious hummus!

Avocado and Arugula Pesto Stuffed Roasted Mushrooms

Fresh greens season is almost here!  I love a good greens salad, but another thing I love to make is delicious pesto!  The recipe I am sharing with you today is for a rich tasting avocado arugula pesto that contains no dairy or nuts!  So it is perfect for those with allergies to those things.  As an appetizer it is wonderful in roasted mushrooms, like it is served in this recipe.  However it is also wonderful in sandwiches as a spread, or as a pasta sauce when thinned out a little.  It is full of healthy fats, the nutritious greens, and it tastes good too!

Sweet and Spicy Nuts

My Grandma always put out a bowl of nuts during the Holidays to snack on when company came over.  I still like the idea, but instead of buying mixed nuts, which can come with a lot of refined sugar or preservatives, I like to make my own so I know what goes into them.  My favorite is a sweet and spicy mix that is super easy to make.  They are so good warm out of the oven, and if you make these your guests will definitely be happy.  You can make them in advance also, as they keep well. These are also a good source of protein!

Beet and Yam Hummus

Getting kids to eat healthy snacks and lunches can be somewhat of a challenge.  When I was a child, I did not like sandwiches so my Mom had a hard time trying to figure out what I would eat.  I did however like to dip things. Like veggies and dip. The recipe I am sharing with you today is a beautifully colored hummus with a wonderful flavor that is perfect for packing in lunches or snacking. I would have loved this as a child as picky as I was simply because of the color.  But it tastes good too!  It gets its flavor and extra vitamins from beets and sweet potatoes.  But you do not have to tell your children they are in there, simply let them enjoy!  This is wonderful with crackers and veggies, or used as a sandwich spread.

Vegan Mozzarella Blackberry Basil Bites

Tomato, basil and mozzarella are a popular summer combination for a salad or skewers, but did you know fruit, mozzarella and basil can be just as delicious together?  I especially love berries as the fruit in that combination. I used to be a big fan of mozzarella, so I have figured out a way to veganize it so I can still enjoy it!  The recipe is gluten free as well as dairy free and nut free, so it is safe for those with allergies as well.  It is wonderful on vegan pizza as it melts beautifully unlike some non-dairy cheeses.  One simple recipe is to serve the cubes of mozzarella with a basil leaf and a blackberry for a delicious little snack that is perfect at a party  (if you are not dairy free, you may use regular mozzarella as if you prefer).

Strawberry Avocado Salsa

Strawberries are not just for dessert, they are awesome in savory dishes as well!  I love them in salads and sauces, but they are also wonderful in salsa!  Fruit in salsa is delicious. It makes it sweet and savory at the same time.  In the recipe I am sharing with you today  I combine the strawberries with avocadoes for a bit of richness and heart healthy omega 3 oils.  Also I add in the usual onions, garlic and lime juice but I use oregano in place of the usual cilantro for a change.  It is light, healthy and perfect when served with tortilla chips or on tacos.

Edamame Guacamole

I love a good guacamole.  It is a wonderful spread for sandwiches in place of mayonnaise, and a great dip for veggies besides the usual chips.  It contains lots of heart healthy fats which is a plus, and if you make your own, it is hard to go wrong.  I decided to make it a bit more substantial and add in some edamame for a sort of cross between a hummus and guacamole; it is delicious!  You can use it in the same way you would guacamole, but it packs a bit more protein. It is a perfect addition to your Super Bowl party.

8 Days of Recipes. Day 8: Festive Winter Vegetable Rolls

Finger foods are a must at Holiday parties, and what better finger food to serve than sushi?  It is light and healthy compared to many of the rich holiday offerings and yet it is beautiful and delicious!  The best thing about it is the filling ingredients can be switched up when the seasons change.  Also, it is usually gluten and dairy free. This recipe I am sharing with you is also vegan so it is safe to serve when you have guests with allergies or are trying to eat lighter.

8 Days of Recipes. Day 6: Macadamia Chevre Stuffed Dates with Pomegranate Seeds

Cheese stuffed dates have always been a favorite treat of mine, and they make a wonderful appetizer.  So I have created a non dairy vegan and raw version of them so those with food allergies and on special diets can still enjoy them as well.  I make a nut cheese with macadamia nuts because they taste the closest to traditional chevre cheese, then I add a few pomegranate seeds and stuff the dates.  It is the most wonderful combination of sweet, creamy, tart and crunchy all in one bite.  You would never guess these do not contain dairy.  They would be perfect at a holiday party on a platter since they are so festive with the pomegranate seeds. If you like your dairy, add one of our many types of goat cheeses available in the deli department.

Coconut Kettlecorn

I love kettlecorn.  Sweet, salty, and crunchy, it covers all the cravings without being too heavy.  The only problem is many commercial kettlecorn varieties contain too much refined sugar, unhealthy fats and an overload of salt.  Which is why I chose to make my own lower glycemic version at home!  I use healthy fats in the form of unrefined coconut oil, and coconut sugar that won’t spike the blood sugar like refined sugar does.  This coconut sugar also gives it an almost caramelly quality that is delicious as well!  You can feel good about enjoying this treat, while also getting the benefits of the fiber in the popcorn.
