Potato salad is a summer picnic staple! This version contains no eggs or dairy but is still every bit as delicious as the classic potato salad everyone grew up eating. It is easy to make and perfect for bringing to a picnic!
We are getting back into coleslaw season, so I thought I would share my twist on the classic, a coleslaw with kale! I like to try to get a variety of greens into my meals and this is the perfect way to do so! It is perfect to make a day ahead for a BBQ or picnic, or even to make as something to bring in your lunches for the week. This has a creamy dressing made from cashew butter so there is no dairy or eggs in it. It is completely plant based and tastes just llike classic coleslaw!
This salad is light and refreshing but also substantial enough to be a main dish or lunch entree. It features some of my favorite spring produce, asparagus, strawberries and peas an it is so delicious! Also it is packed with fiber, protein and nutrients so you can feel good about serving this to your family!
I love beets in any season, but I especially love them in the spring! This salad combines them with sweet mangoes, arugula and some vegan feta for a flavorful and delicious side dish or light main dish. This would be the perfect addition to your Easter meal for something colorful and healthy!
Just because it is winter, does not mean you can’t enjoy veggie packed salads! We could all use a bit more vitamins from our food this time of the year, which is why I like to make things like this Chopped Kale Salad! It is easy to make, but packed with nutrients, and so delicious! I like to make a batch, then eat it in my lunches I take to work for the week with some edamame or tofu served on top for more protein!
I love roasted squash in the cooler months! It is packed with nutrients and has a naturally sweet flavor. This salad combines it with colorful pomegranate seeds, and a tangy spicy dressing. It is healthy, delicious and perfect for serving with your holiday meal!
In late summer when the weather starts to cool off a little but it isn’t quite soup weather yet, it is the perfect time for a hearty grain salad. Like this wild rice and corn salad! This salad is filled with colorful veggies, crunchy hazelnuts and is coated in a tangy vinaigrette. It is delicious, healthy and easy to make!
This time of the year when fresh produce is abundant, I like to make lots of salads. I use tomatoes often, sometimes just by themselves, but I also like to combine them with other fruit like the nectarines in this one. I also add in sweet corn which is at its peak of season right now, along with fresh mint for freshness, and a little lemon to make the flavors pop. Lastly a bit of vegan mozzarella cheese for a little richness. This salad is so simple to make but so good and so healthy!
I have always loved caesar salad! Usually it is made with romaine lettuce, but here I use earthy kale instead to give it a nutritional boost! This salad has a flavorful dressing that tastes like classic caesar dressing but it happens to be vegan! If you wanted to make this gluten free, you could use gluten free bread in place of the baguettes.
I love a good potato salad in the summer! But sometimes I like to switch it up and make something with a non-mayo based dressing. This potato salad has a light flavorful dressing with a bit of spice, and colorful veggies. It is the perfect side dish for a summer picnic!
