The spring is the perfect time to enjoy asparagus! My favorite way to enjoy it is roasted with a little olive oil and sea salt. Here, I combine it with green beans and drizzle a tangy lemon tahini sauce for a delicious combination! This would be perfect for an Easter side dish!
I am a big fan of fried cauliflower, so I thought why not try broccoli as well! However, I like to make it healthier than frying it in a bunch of oil, so I bake mine instead and it still comes out nice and crispy! I serve it here with a lemon tahini dipping sauce and it is so delicious! Not only that, you get your daily fiber and a satisfying snack all in one!

I like to make a batch, then eat it in my lunches I take to work for the week with some edamame or tofu served on top for more protein!

Green bean casserole is a holiday classic I enjoyed growing up so now as an adult, I make a veganized version! The original one used a can of cream of mushroom soup and green beans, but for mine I make my own mushroom sauce and use frozen green beans and I think it tastes even better! Plus it is gluten and dairy free!

This time of the year when fresh produce is abundant, I like to make lots of salads. I use tomatoes often, sometimes just by themselves, but I also like to combine them with other fruit like the nectarines in this one. I also add in sweet corn which is at its peak of season right now, along with fresh mint for freshness, and a little lemon to make the flavors pop. Lastly a bit of vegan mozzarella cheese for a little richness. This salad is so simple to make but so good and so healthy!
