You may think of hummus as strictly a savory item, but did you know it is delicious as a dessert?  Chickpeas are a pretty neutral flavor, so you can add pretty much anything to them!  As a seasonal treat, I made a pumpkin spice dessert hummus with pumpkin puree, pumpkin spices, maple syrup, nut butter and vanilla and it is so good!  It is packed with fiber and protein, but tastes like pumpkin pie!  If you are looking for a healthy snack option for your Halloween party or fall gathering, give this a try!  It is delicious served with cinnamon crackers, or apple or pear slices!

Seeded Flax Crackers

These crackers are not only delicious but healthy as well!  They are loaded with heart healthy omega 3 rich seeds, as well as fiber and they are the perfect thing to serve with hummus, on the side of a soup, or just for snacking! They are made in the dehydrator, but if you don’t own one, you can bake them in the oven at a very low temperature with good results as well. I like to keep a container of these on hand at all times!

Trail Mix Granola Bars

I loved granola bars when I was a kid.  We usually would buy them from the store, but if I had known how easy they were to make I would have asked my Mom to help me whip up a batch.  These ones come together in about 15 minutes (not including chilling time), and they are worth making yourself, because they taste even better than store bought!  They are loaded with fiber from the oats and dried fruit, and protein thanks to the nut butter.  If you are not a fan of peanut butter, feel free to use almond butter instead and chopped almonds instead of the peanuts.  Or, if you have a nut allergy, you can use sunflower seed butter instead of the peanut butter, and sunflower seeds instead of the peanuts.  All of these variations are just as delicious and satisfying!

Blackberry Apricot Popsicles

Popsicles are the perfect thing to cool off with on a hot Summer day!  Although you can buy them already made, many of the commercially made ones have refined sugars, flavors and colors so I like to make my own.  These blackberry apricot popsicles are not only healthy and filled with nutrients since they contain real fruit, they are easy to make and delicious as well!  If you would like to use stevia to taste instead of the maple syrup, that is also another option.

Raspberry Salsa

If you are looking for a fresh, new salsa to serve at your 4th of July BBQ, I have the perfect recipe for you!  This raspberry salsa is not only delicious and easy to make, but packed with nutrients.  Raspberries are at their best and most flavorful this time of year in Minnesota, so I am taking full advantage of that and enjoying them as much as I can.  This salsa is a little spicy, but if you prefer it to be less spicy, cut down on the amount of jalapeno, and remove the seeds before chopping.  This is wonderful served over grilled tofu or as a topping for tacos, or of course with organic corn tortilla chips!
