One of my favorite healthy summer treats for when the mangoes are at their best and we all want something refreshing to sip on, is a mango lassi. Traditionally they are made with dairy yogurt, but I like to make mine with coconut yogurt to keep it vegan. Just a little lime juice, fresh mangoes and a touch of maple syrup and you have something that tastes like dessert, but is actually good for you. The ones I am sharing with you today are actually baked as well so they have much less fat than traditional fries and they pack more fiber since I am using beets and carrots instead of potatoes. Just because you choose not to eat gluten or animal products does not mean you can not enjoy delicious freshly baked muffins! These banana pecan mini muffins, are gluten free thanks to the Bob’s Red Mill all purpose gluten free baking flour I used (which you can get at Fresh and Natural Foods), and vegan, because they are made without eggs but still light and fluffy. Don’t worry though you can not tell that they are not traditional muffins because they are just as delicious! These make the perfect Saturday morning treat!
Just because you have decided to go dairy free or are vegan, it doesn’t mean you have to give up things like cream cheese. Not when you can make your own dairy free version at home! The recipe I am sharing with you today is for a super delicious jalapeno cream cheese that is good on savory bagels, or as a sandwich spread, as a veggie dip, or for with crackers. It is made from cashews and coconut milk and it tastes so rich and delicious you would never guess that it is vegan! It is really simple to make as well! If you are more of a sweet than savory person, you could leave out the jalapenos, pepper flakes and garlic and instead add 1 cup freeze dried berries plus 2 Tbsp maple syrup instead for a sweet berry cream cheese.

Almost everyone makes cranberry sauce for Thanksgiving, but sometimes I like to switch it up and make something else with cranberries. Like this salsa recipe I am sharing with you today! I love classic salsa, but fruit salsa can be delicious too! And why not use cranberries instead of the usual mangoes or pineapple. I like to use what is in season, and cranberries are widely available right now so they are perfect! They have a nice tart sweet flavor, and they actually pair really well with the savory elements of salsa. This is healthy and delicious, the perfect pre-Thanksgiving snack when paired with corn tortilla chips!
