Pamela’s® Pancake & Baking Mix
Pancakes were a must when I went gluten free. I love my pancakes with real maple syrup, and I was not about to give them up. Breakfast happens to be my favorite type of meal! Pancakes, waffles, eggs and bacon, I could go on and on. After trying about seven different pancake mixes, I found one that I absolutely love. Pamela’s® has to be one of the top ten items I recommend to newly gluten free customers. It’s the best mix for people that don’t want to make their pancakes from scratch. Pamela’s Pancake & Baking Mix is amazing . This gluten free, wheat free mix comes in 2 sizes: 24 oz’s and 4 pound bag. It has so many uses outside of just pancakes, it’s a must for any cupboard. On the back of the large bag alone, there are 9 recipes for such things as waffles, muffins, scones and cakes.
With my birthday coming up, my sister uses this mix with my grandmother’s cake recipe to make the best gluten free cake I have ever had. If you want to try it in your favorite recipe, just remember that this mix contains baking powder and baking soda, so skip those items in your recipe or you might get a brick instead of a cake. This mix does not have much fiber per serving, so try adding in ground flax seed, or topping with fresh fruits such as warmed apples, pears, blackberries, bananas or figs. This mix does contain dairy and almonds (tree nuts), so please avoid if you have these allergies or intolerances. Serve this up at any breakfast, and you are sure to be asked for seconds. Make sure to use real maple syrup as nothing else compares. I happen to love grade B as it has a much stronger maple flavor. Have a happy breakfast!
