Black Bean Quinoa Burrito Bowl
One of my favorite go to dinners? Burrito bowls! They are easy to make if you have cooked or canned beans and salsa on hand, are packed with protein and very healthy! My favorite way to make them is with quinoa instead of rice for more protein. Because when you add beans to that it is enough to satisfy you and you will not miss the meat at all. You can find delicious salsa in our deli department to make it even easier to get these on the table fast. It takes less than 30 minutes to make these, and I guarantee once you try them you will be making them again!

Place quinoa, garlic and water in a medium saucepan and bring to a boil. Reduce to a simmer, cover and cook until all the water is absorbed about 15 minutes, or when all the grains have turned from white to transparent, and the spiral-like germ has separated. Drain.Spoon the quinoa into bowls, then top with the black beans, cabbage, scallions, avocado, cilantro and salsa. Serve with hot sauce!
