Bacon and Egg Brunch Sandwiches

Lazy Sunday brunch is a great way to enjoy catching up with friends and family. This breakfast sandwich is simple to make and has big flavor. Using a savory bread baked with garlic and herbs and a made-from-scratch basil aioli, your brunch entrée will wow all your weekend guests!

Preheat oven to 400 degrees. Line a cake pan with aluminum foil and place your bacon in the pan side by side. Bake for 20 minutes for a light crispness but if you prefer a crunchier bacon bake until your desired level has been reached checking every few minutes. Once bacon is done place on a plate lined with paper towel to drain off the excess grease.

Next make your aioli by stacking your basil leaves on top of one another and then rolling them into a tight roll. Then with a sharp knife slice through the roll making little basil ribbons and add these into your mayonnaise and set aside. Slice your tomatoes and avocados into 1/4 inch slices and set aside.

In a large saute pan over medium low-heat place 2 tablespoons butter and melt. Crack your six eggs into the pan and fry them flipping once 2-3 minutes per side.

Place 6 large slices of the bread into the oven to toast for 3-4 minutes and remove.

To assemble the sandwiches place the bread flat on the counter and spread the basil aioli on top of all 6 slices. Take a handful of spinach and place it on only 3 of the slices of bread you will continue to build up the ingredients on just these 3 slices. Place 2 fried eggs on top of the spinach followed by 3 pieces of bacon crisscrossing the bacon so it doesn’t slide off the sandwich. Next, place the tomato and avocado slices, and top with the last pieces of bread.
