Almond Crusted Apple Galette
Sometimes you want apple pie, but a little bit less work. That is where galettes come in. They are non-fussy and just as delicious! Especially when made with Honey Crisp Apples which are available at Fresh and Natural Foods. The recipe I am sharing with you today is gluten free, dairy free and egg free (also vegan), but you would never know since it tastes so good! I use almond flour in my crust to make it richer, and add a nutty flavor, and coconut oil in place of the usual butter to make it dairy free. Preheat the oven to 400F degrees.To make the crust, in a large bowl, mix together flours, sugar, sea salt. Cut in coconut oil with a pastry blender or 2 knives until it is in pea sized pieces. Mix in just enough water to create a smooth dough that holds together but isn’t too sticky. Add a touch of water if needed, and knead slightly until a smooth dough is created. Roll each out into about a 9-10 inch round using parchment underneath and floured rolling pin. Toss the apples with the rest of the filling ingredients and arrange on top of the crust leaving a 1 1/2 inch boarder. Fold the sides of the crust up overlapping them (don’t worry if it is not perfect, this is a rustic pie, and you can patch holes). Place the parchment and the galette (use the parchment to move it) onto a sheet pan. Place in the oven, and bake for about 45 minutes until the apples are tender and crust is lightly brown. If at any time it gets too brown, tent it with foil until finished baking. Remove from the oven and let cool until warm before enjoying.
