Almond Soba Noodle Salad

If you are looking for a healthy, quick and delicious dinner, noodles are a great option!  The salad I am sharing with you today uses soba noodles which are made from buckwheat and happen to be naturally gluten free!  They are a great alternative to spaghetti if you like a more whole grain tasting pasta.  I combine them with veggies and an almond butter sauce, and it comes together in under 30 minutes!  Give this a try the next time you need something healthy fast!

  1. Bring a large pot of water to a boil, and cook the pasta according to package directions.  Drain, and rinse with cold water until the starch is rinsed off the the noodles are cool.
  2. Drain well, and add to a bowl along with the veggies.
  3. Whisk together the dressing, then toss with the noodles.
  4. Sprinkle with the almonds before serving.
