Almond Soba Noodle Salad
If you are looking for a healthy, quick and delicious dinner, noodles are a great option! The salad I am sharing with you today uses soba noodles which are made from buckwheat and happen to be naturally gluten free! They are a great alternative to spaghetti if you like a more whole grain tasting pasta. I combine them with veggies and an almond butter sauce, and it comes together in under 30 minutes! Give this a try the next time you need something healthy fast!

- Bring a large pot of water to a boil, and cook the pasta according to package directions. Drain, and rinse with cold water until the starch is rinsed off the the noodles are cool.
- Drain well, and add to a bowl along with the veggies.
- Whisk together the dressing, then toss with the noodles.
- Sprinkle with the almonds before serving.
