Apple Broccoli Slaw

One of my favorite savory apple recipes is an apple broccoli slaw.  It is easy to make, and the best part about it is you can use up those broccoli stalks instead of wasting them.  I actually think they are sweeter than the top of the broccoli.  This salad is delicious, and packed with lots of vitamins and fiber thanks to the apples and broccoli. Plus I use an almond dressing and top with almonds for crunchy so you get a little bit of protein as well.  This salad keeps well for a few days, so it is perfect to pack in your lunches as a side salad.

Instructions

Combine all salad ingredients together in a bowl. In another bowl, whisk together the dressing ingredients (adding a little more water if too thick), then toss with the salad. Serve!
