Asian Beet, Pear and Avocado Salad
Beets are good year round, but I especially love them in the Spring. I think that they are the most flavorful, sweet, and delicious when roasted. They are rich in nutrients, so they are something that is good to enjoy often. The salad I am sharing with you today combines them with heart healthy avocados and sweet pears in an Asian dressing for a delicious combination. It may sound unusual, but it is so delicious! Next time you are in the mood for beets, give this salad a try!

- To cook the beets, preheat the oven to 400F degrees.
- Wrap the beets in foil, then place in the oven. Roast for about an hour to an hour and 15 minutes or until the beets are tender when pierced with a knife.
- Remove from the oven, and let cool until you can comfortably peel them. Slice them, and set aside in the refrigerator until completely cool.
- Combine the beets, pears, avocado, and green onions in a bowl, and add all of the dressing ingredients and sesame seeds. Toss together, and enjoy!
