Asian Sausage and Rice in a Bowl

Looking for a quick and easy recipe that has sausage, coleslaw, veggies and rice?  To add a little kick there is fresh ginger added that you will enjoy!  This recipe takes 20 minutes tops to cook and then you can eat and relax.

  1. Heat a 12-inch skillet over medium high heat. Add sausage; cook, stirring and breaking up lumps, until browned and crumbly, 5 to 7 minutes. Drain skillet.
  2. Add coleslaw mix, carrots, green onion, minced garlic, soy sauce, and sesame oil to skillet. Cook, stirring, until softened, about 5 minutes. Stir in peanuts (optional) and ginger. Serve over hot rice and garnish with green onion tops and additional peanuts if desired.
