Avocado Grapefruit Salad
Many people think of grapefruit as something to be served at breakfast cut in half, but really there are so many delicious ways of serving it. I use it in salads, desserts, and just plain like an orange. If you have not tried the pink variety, you must! They are just the right amount of sweet and tart, so no need of added sugar; find them in our produce department. One of my favorite ways to serve them is in a winter salad paired with avocados. The rich avocado is wonderful with the tart grapefruit; add some nuts in and even better! It is a great way to get your vitamin C, healthy oils and greens.

On two plates, place a mound of greens. arrange grapefruit slices over each mound, then the avocado slices, dividing evenly between the two. Sprinkle pistachios over the top of the salads.
In a small bowl, whisk together the orange juice, zest, vinegar, olive oil, poppy seeds , honey, and sea salt. Drizzle the dressing over the salads and serve!
