Avocado Potato Salad

If you love classic creamy potato salad, but are not a fan of mayonnaise, I have a great solution for you!  Dressing made with creamy avocado.  It is heart healthy and so delicious.  You will not even miss the mayonnaise.  I add in a little lemon juice and fresh herbs and sea salt and that is all it needs to taste wonderful.  I add in some extra veggies to this potato salad as well for extra crunch and nutrients.  If you are looking for a healthy potato salad that is kind to your waist line and won’t leave you feeling weighed down, this one is the perfect choice!

Add the potatoes to a pot of salted water, and bring to a boil. Lower to a simmer and cook for about 10 minutes until the potatoes are tender when pierced with a fork. Allow to cool completely.To make the dressing, combine all ingredients in a food processor and process until smooth.Add the potatoes, and all other veggies to a bowl, and toss with the dressing. Serve!
