BBQ Pork Nachos

Last week I shared with you my recipe for pulled pork sandwiches, and this week I’d like to share with you what I like to make with my leftover’s from that recipe. I like to make BBQ pork nachos with the leftover meat. Just adding a few more ingredients like roasted corn and sweet and spicy pickles changes the flavor up a bit and trust me these nachos are delicious!

Preheat oven to 350 degrees. In a 9×13 baking pan place a layer of tortilla chips down followed by a layer of pulled pork, corn, onion and half the cheese. Repeat with another layer of chips, meat, corn, onion and remaining cheese. Bake in the oven for 10 minutes. Remove from onion and sprinkle the pickles over the top and drizzle the nachos with a little BBQ sauce. Serve immediately.
