Beef Stew

One of my favorite comfort foods is a stew in any form, but especially a beef stew. Making a stew is a great way to clean out your pantry. Just grab a can of diced tomatoes and any kind of veggies you want, add some beef stew meat and you’ll have a delicious dinner in a couple of hours, no muss no fuss!

Season the beef steak cubes with salt and pepper. In a crock-pot combine the beef, potatoes, carrots, onion and parsley and mix well. Pour in the beef broth, diced tomatoes and paprika and a little more salt and pepper and mix well again. Cover and cook on high for 6 hours. Stir in 2 teaspoons of fresh chopped parsley before serving.

Serve with some crusty bread to soak up the juices and a small side salad!
