Berries and Cream Parfaits

When I was little, my mother would always bring a berry dessert to our family’s 4th of July celebration. I always loved it, and I like to keep the tradition going, favoring berries in my 4th of July desserts.  After all, they are perfect, red, blue, and paired perfectly with white whipped cream for a naturally festive dessert.  The one I am sharing with you today is super simple, but delicious and pleases everyone.  It is a berries and cream parfait that uses coconut milk in place of heavy cream so it is dairy free, and vegan friendly.  It is also naturally gluten free.  It comes together fast, in about 15 minutes and it can be made ahead of time so it is perfect for serving at a party.

In a food processor, blend the coconut milk, maple syrup, sea salt and vanilla until smooth. With the motor running, slowly add the coconut butter through the feed tube (you don’t want it to clump up. If it does, just blend until it is warm and the coconut butter is smooth and not chunky. You will just have to chill it for about 45 minutes in the freezer, whisking about every 15 until thick). Once the coconut butter is added and the cream is thick, you know it is ready. To assemble, place some berries into the bottoms of 4 glasses. Then spoon some cream over that. Then some berries over that, then more cream, then more berries to top them off. Serve right away, or keep chilled until serving.

    No, the directions are correct. Did you use a full fat coconut milk, one with at least 3/4 of the can being cream? Because the brand that is suggested in the recipe has the correct ratio of cream and liquid. If a lighter coconut milk was used in the recipe, this could be why. Also, did you use coconut butter or coconut oil to thicken it? Because that could also make a difference. It has to be butter for this recipe. I hope that helps!
