Berry Beet Salad

Beets and berries are a match made in heaven, and great if you want nutritional bang for your buck it is a great combo!  Beets are high in iron, and berries in antioxidants, combine them with greens and you have a great salad!  The recipe I am sharing with you today combines them with a simple lemon vinaigrette and it is super delicious!  This would be a great starter salad for upcoming Valentine’s day by the way.

  1. Whisk together the dressing ingredients.
  2. Toss the dressing ingredients with all other ingredients in a large bowl, and serve!

*To cook beets, wrap them in foil and place them in a 400F degree oven.  Bake for about 1- 1/2 hours until tender.  Let cool, and peel under running water.
