Blueberry Lemon Refrigerator Jam
I love berries this time of the year when they are at their most flavorful and in season! One of my favorite healthy things to make with them is refrigerator jam. It comes together in about 15 minutes, and it is so good! The recipe I am sharing with you today contains only 5 ingredients. Blueberries and lemons are the stars and I add in a little maple syrup to sweeten, and ground chia seeds to thicken it up as well as add a little protein and heart healthy omega 3 fatty acids. It is really delicious and keeps for a few weeks in the refrigerator (if it lasts that long). It is perfect for on toast, stirred into oatmeal, or as a healthy topping for ice cream or cake!

- To make the jam, place the blueberries, lemon juice, maple syrup and sea salt in a medium pot over medium heat and cook until the berries have burst, and they are all soft, about 10-15 minutes.
- Whisk in the chia seeds.
- Allow to sit and cook completely in the refrigerator, then pour into a jar.
- Store in the refrigerator for up to 2 weeks.
