Buffalo Chicken Salad & Other Salad Upgrades

Switch up your favorite greens with combos that add flavor and crunch.  Today we are featuring Buffalo Chicken Salad with listed ingredients. Two other salad alternatives are Roasted Chickpea Salad and Crunchy Peanut and Tofu or Chicken Salad.  Any one of them would be great!

Instructions

Layer the ingredients in the following sequence:

  1. Buffalo Chicken Salad: tossed mixed greens, chicken slices, sliced celery, blue cheese crumbles and top with buffalo sauce and ranch dressing.
  2. Roasted Chickpea Salad: tossed mixed greens, roasted chickpeas, halved cherry or grape tomatoes, chopped cucumber, toasted sunflower seeds, and topped with vinaigrette dressing.
  3. Crunchy Peanut and Tofu (or Chicken) Salad: tossed mixed greens, shredded cabbage and carrots, sliced red bell pepper, topped with thai peanut sauce and chopped roasted peanuts.
