Carrot Cherry Slaw

I love a good slaw recipe during the warmer months. Classic is cabbage of course, but sometimes I like to switch it up and use other veggies or even fruits in mine.  This Carrot Cherry Slaw is pretty simple and not a combination one might think to put together, but it is so sweet and delicious, not to mention good for you.  This slaw is packed with antioxidants from the carrots and cherries.  I add in some protein with some sunflower seeds as well, and keep it light with a lime dressing.  This salad would make a pretty and tasty side dish at any picnic!

In a large bowl, combine the carrots, scallions, cherries and sunflower seeds. In a small bowl, whisk together the dressing ingredients, then toss well with the salad and serve!
