Cherry Almond Chocolate Chunk Energy Bars

It can be hard to eat healthy on the go sometimes, so I always like to have energy packed snacks to bring along. I make my own energy bars often, and I like to load them up with ingredients that contain healthy proteins, oils, and antioxidants.  The recipe I am sharing with you today is an delicious cherry chocolate energy bar that is good for you, but you would never guess because it tastes wonderful!  I include healthy omega 3 rich chia seeds and flax seeds, as well as heart healthy oats, cherries and chocolate.  The cherries and chocolate contain antioxidants too!  I use Luv dark chocolate because I don’t like added refined sugar in my snacks.  These are sweetened with dates, which are about as natural as you can get when it comes to sweeteners.  I cut these into bars, but they can also be rolled into energy balls and chilled after the mixing stage if you prefer. These keep for at least a month in the refrigerator ready to go for when you need them, but I doubt that they will last that long!

In a food processor, combine the coconut butter, almond butter, dates, and sea salt together, and blend until smooth.  Add seeds, oats, and cherries and process until starting to hold together when squeezed.  Add the chocolate chunks and pulse until distributed.  Pour into a parchment lined 8×8 inch pan, and press until it is holding together.  Place in the freezer for about 45 minutes to 1 hour and then remove from the pan and cut into bars.  Store in the refrigerator in an airtight container.
