Chickpea Salad Sandwiches

If you are trying to be more Earth friendly, cutting down on meat can help!  It takes a lot of water and resources to raise animals, so if you are eating crops like beans instead, they save on those things.  They need a lot less energy to produce, and put less pollutants into the atmosphere when grown organically.  Even if you are not eating meat, you can still enjoy delicious sandwiches.  The one I am sharing with you today is a “chicken style” sandwich, but actually contains chickpeas for the protein.  I add in a few chopped veggies as well for crunch!  It is vegan, gluten free (if made on GF bread), egg free and super delicious!  This chickpea salad is perfect for making ahead, then packing in lunches, and you can feel good about eating it!

Instructions

  1. For the mayonnaise, whisk together all ingredients until combined.
  2. To make the salad, combine the chickpeas, celery, carrots, scallions, pepper, and mayonnaise (you can always add more if need be).  Mix until all ingredients are well incorporated.
  3. Toast your bread (or at least I like to, you may leave it un-toasted if you like), then place a lettuce leaf on two of the slices, then the tomato slices, then some of the chickpea salad, then another slice of bread.  And enjoy!
