Chipolte-Honey Glazed Shrimp and Pineapple Skewers
Looking for a sweet and spicy flavor duo? Here is the glaze is a fiery combo of honey and chipolte peppers. You can serve these grilled shrimp and pineapple skewers with any salad or veggies that you wish. You may even want to include some crackers or dinner roll to balance out the spiciness. If you like spice, this is for you, although you can tone it down with less chipolte peppers.

- Alternately, thread shrimp and pineapple onto eight 10-inch skewers. (soak wood skewers in water for 30 minutes before threading and grilling).
- In a 1 or 1 1/2 inch-qt saucepan melt butter over medium. Add chipolte peppers and cook 1 minute or until fragrant. Add honey, cook one minute, stirring constantly, until combined. Removed from heat. Brush skewers with half of the butter mixture.
- Grill skewers, covered, on a greased grill rack directly over medium 8 to 10 minutes or until shrimp are opaque and pineapple begins to char, turning skewers once and brushing with remaining butter mixture halfway through grilling. Top with cilantro if desired.
