Citrus Edamame Salad

Organic edamame is heart healthy, it is delicious as well.  Which is why it is the perfect thing to add to meals to make them more satisfying.  The recipe I am sharing today combines it with fresh citrus, spinach and avocado.  It is rich in antioxidants, nutrients, protein and fiber.  So it is the perfect balanced meal if you are trying to eat healthy, and still be satisfied.  Not only that, it is delicious as well, and this is the perfect time to make it when citrus is in season!

  1. Combine the edamame, green onions, oranges, avocado and spinach in a large bowl.
  2. Whisk together the orange juice, lemon juice, sea salt, and avocado oil and then pour over the salad in in the bowl, and toss together until everything is evenly distributed.
  3. Serve!
