Comfort Pork Chops & Rice (GF)
I don’t know about you, but I am always looking for fast entrees to whip up with staple ingredients that I usually have on hand. This is a great recipe for the winter. Not only is it easy, it satisfies that comfort food craving without weighing you down. It is also another way to put that rice in the cupboard to use. This gluten-free recipe is one the kids will love.

To cook rice, heat pan on medium heat. Add oil, add rice. Sauté rice until all coated with oil and grains start to turn white. Once grains of rice start to look toasted add 2 cups water. Cover simmers until all the water is gone about 20 mins.
Season both sides of the pork with the salt and pepper. In a sauté pan brown both sides of the pork chops lightly. Once both sides are browned add 1 can of cream of mushroom soup and I cube garlic. Simmer for 10 min stirring often. Take the temperature of meat. Once meat reaches 145° F add one package of frozen vegetable cover and continue to cook for 5-8 minutes until vegetables are heated. Serve over rice.
