Creamy Cucumber Salad

This cucumber salad is refreshing, cooling and perfect for summer!  It also happens to be vegan and gluten free, but you would never know by tasting it since the dressing is creamy and delicious like traditional cucumber salad.  This is great for picnics!

  1. For the dressing, whisk all ingredients together until smooth.
  2. Place the cucumbers and scallions in a bowl, and pour the dressing over.
  3. Toss to combine. Serve!
