8 Days of Recipes. Day 3: Dairy Free Eggnog

Just because you are following a vegan, soy free or gluten free way of eating, does not mean that you can not enjoy eggnog around the holidays.  Although there are store bought versions available, they often contain soy or lots of refined sugar.  I have come up with a vegan, gluten free, soy free version that is rich and delicious without being filled with sugar or dairy.  Coconut milk and macadamia nuts stand in for the cream and nutritional yeast gives it a bit of an eggnog flavor.  If you are making this, feel free to tailor it to your needs.  You can use soaked cashews or pine nuts in place of the macadamias if  that is what you have on hand, and if you want a sugar free version feel free to use stevia to sweeten.

In a high speed blender, combine all ingredients and blend until smooth.
