Dark Chocolate Almond Raspberry Cups

Of course you can go out and buy chocolates for Valentine’s Day to give to your special someone, but you know what is even more special and meaningful?  Making some yourself. I always appreciate it when someone puts time into something for me, much more than spending money.  I have a recipe so simple for you today, that anyone can make it, and it will look pretty and taste good.  It just requires 3 ingredients.  Dark chocolate, dried raspberries, and almonds.  It is a heavenly combination, let me tell you. I use Luv dark chocolate because it is sugar free without all the fake stuff and tastes just as good as other good quality dark chocolate.  So these are heart healthy, won’t spike your blood sugar, and delicious!  So you can give your someone special a treat that will help them be healthy without them even knowing it.

Instructions

In the top of a double boiler, melt the dark chocolate chunks. Stir in the raspberries and almonds, and pour into foil muffin tins or silicone molds. drop a few more raspberries and almonds over the top, then place in the freezer to set up for about 15 minutes. Pop out of the molds, and enjoy! May be stored in the refrigerator for up to a month in a sealed container.
