Detoxifying Veggie Rice

Feeling like you need some light and fresh food after the Holiday season, but still craving starches like rice?  Have I got the recipe for you!  It is a vegetable rice made without actual rice.  The “rice” is made from celeriac (or celery root).  You may think that this sounds odd, but it is the perfect substitute for rice!  It doesn’t get stinky like cauliflower rice, it is neutral so it absorbs the flavors you add to it.  I like to add plenty of veggies, and a little turmeric for anti inflammatory properties. The optional hemp seeds provide protein and heart healthy omega 3 oils.  This rice is delicious, filling, and great for a detox.

Instructions

In a food processor, combine the celeriac, garlic, sea salt, turmeric, smoked paprika and nutritional yeast, and pulse until everything is combined and the celeriac is chopped into the size of rice grains.  Add 1/2 cup of the cherry tomatoes, and pulse a few times until chopped.  Mix in all other ingredients, and serve at room temperature.
