Easy Taco Soup
Here is a super simple recipe that makes a lot of food, meaning you won’t have to worry about lunch or supper for several meals. In addition, it is very healthy and delicious. You can finish it off with corn chips or shredded cheese, but there’s lot of opportunity to get creative here. For extra zing, top it with fresh cilantro, sour cream, or greek yogurt. Yum!

- Brown ground turkey or beef in a large dutch oven medium-high heat, stirring constantly, 8 to10 minutes or until meat crumbles and is no longer pink; drain. Return to Dutch oven..
- Stir pinto beans, next 8 ingredients, and 2 cupServe with desired toppingss water into meat; bring to a boil. Reduce heat to medium-low. simmer, stirring occasionally, 30 minutes. Additional water may be added for desired consistency and simmer some more. Serve with desired toppings.
To reduce sodium intake: use low-sodium chicken broth, and add salt substitute seasoning combined with equal parts of paprika, ground cumin, chili powder, onion powder. Omit the addition of cheddar cheese and corn chips.
