Easy Vegan Strawberry Ice Cream

Strawberries are one of my favorite things about Spring!  I kind of miss them during the Fall and Winter months, so when they are available again I get excited.  We are still a little ways out from the fresh local ones, but luckily I can enjoy the frozen ones in the mean time.  One of my favorite things to make with them is strawberry ice cream.  I have a really good recipe that is super simple, really delicious and it also happens to be gluten free, dairy free, and vegan!  It tastes just as good as regular ice cream too, so you would never know.  Next time you are craving ice cream, give this a go!  If you don’t have an ice cream maker, no worries, I have included instructions for freezing without one.

Combine all ingredients in a blender and blend until smooth.  Pour into an ice cream maker and process according to directions.  Alternatively, if you do not have an ice cream maker, pour it into a bowl, and whisk every half hour until it is to the consistency of a very thick malt.  Pour into a freezer safe container with a lid, and continue to freeze until firm enough to scoop (at least 4 hours or overnight). If it becomes too firm, simply let it sit out for 15 minutes before serving.
