French Style Potato Salad

If you are looking for a potato salad that is a little lighter, but packed with flavor, look no further than this French style potato salad!  It has a light vinaigrette instead of the typical mayonnaise based dressing, and it is really delicious!  It is the perfect thing to serve at your BBQ as a side dish, and it happens to be gluten free, dairy free, egg free and vegan so if you are inviting guests with any of those dietary restrictions, they will be able to enjoy it!

  1. Add the potatoes to a pot of salted filtered water, and bring to a boil.  Lower to a simmer and cook for about 10 minutes until the potatoes are tender when pierced with a fork.  Add the green beans and cook a minute more, then pour into a colander, rinse with cool water, than drain and allow to cool completely.
  2. Place potatoes and beans in a bowl along with the radishes and capers.
  3. To make the dressing, whisk together all ingredients until well combined.
  4. Pour over the veggies in the bowl, and toss together gently until everything is coated.
