Ok! It’s National Clean Out Your Refrigerator Day! Time to decide what to make. Here is one idea that is easy and quick to make and of course delicious to eat: Frittatas. These egg dishes are ever so inclusive, you can add so many different types of leftovers, have a great meal and reduce food waste.

  1. Saute peppers and onion with 1 T olive oil.
  2. Saute zucchini with 1 T olive oil. Add the peppers and onion mixture to the zucchini.
  3. Scramble the eggs with 1 T olive oil.  If desired, add 1T milk for softer eggs.
  4. Pour the egg mixture onto the zucchini/peppers/onion mixture on low medium heat. Watch the eggs until they are done. Egg mixture should no longer be runny but have a lightly browned texture.
