These egg dishes are ever so inclusive, you can add so many different types of leftovers, have a great meal and reduce food waste.

- Saute peppers and onion with 1 T olive oil.
- Saute zucchini with 1 T olive oil. Add the peppers and onion mixture to the zucchini.
- Scramble the eggs with 1 T olive oil. If desired, add 1T milk for softer eggs.
- Pour the egg mixture onto the zucchini/peppers/onion mixture on low medium heat. Watch the eggs until they are done. Egg mixture should no longer be runny but have a lightly browned texture.
