Preheat oven to 375 degrees.

In a large bowl crack the eggs and add 1 teaspoon salt and ½ teaspoon black pepper and the half and half and whisk until well incorporated.

In a large oven safe skillet, melt 1 tablespoon of butter over medium heat add italian sausage and onions and cook until meat is no longer pink; about 8 minutes then remove from pan and set aside. Add 1 tablespoon of butter and sauté the mushrooms for 3 minutes. Add 2 tablespoons butter into the pan and toss in the roasted potatoes ( I roast mine in a little olive oil, salt, pepper and rosemary in the oven at 400 degrees about 25 minutes)

Next, pour the italian sausage and onion mixture over the top and spread all of the ingredients out into an even layer. Next pour your egg mixture into the pan starting in the middle and working your way to the edge of the pan in a circular motion so as not to “spread” your ingredients to the edge of the pan. Allow to cook for 3-5 minutes.

Then, place the pan into the oven for 20-25 minutes until frittata is set. Remove from oven and sprinkle a small amount of cheese over the top and some chopped parsley and allow cheese to melt. With a rubber spatula gently loosen the frittata away from the edges of the pan. Then with a large spatula gently place it under the frittata until you reach the center tip the pan slightly and slide it onto a large serving dish. Slice into 8 pie slices and serve hot or room temp.
