Grapefruit in Rosewater with Coconut Cream
Grapefruits are at their best and most flavorful this time of the year, so it is the perfect time to enjoy them! I like them just as is, but they make a lovely light dessert when combined with a few other things. Here, I combine them with a little maple syrup and rosewater plus some pistachios and mint for color and top them off with coconut cream. It is a heavenly combination!

- Combine the grapefruits with the Tbsp maple syrup and rosewater in a bowl, and mix together, then divide between 2 serving dishes.
- Whisk together the coconut cream with the tsp maple syrup until combined.
- Spoon the coconut cream over the grapefruit in the serving dishes, then top with the pistachios and mint.
