Grapefruit in Rosewater with Coconut Cream

Grapefruits are at their best and most flavorful this time of the year, so it is the perfect time to enjoy them!  I like them just as is, but they make a lovely light dessert when combined with a few other things.  Here, I combine them with a little maple syrup and rosewater plus some pistachios and mint for color and top them off with coconut cream.  It is a heavenly combination!

  1. Combine the grapefruits with the Tbsp maple syrup and rosewater in a bowl, and mix together, then divide between 2 serving dishes.
  2. Whisk together the coconut cream with the tsp maple syrup until combined.
  3. Spoon the coconut cream over the grapefruit in the serving dishes, then top with the pistachios and mint.
  4. Serve!
