Honey Crisp Apple Salad with Spiced Pepitas
A simple salad with crisp lettuce, sweet apples, and spiced nuts or seeds is a delicious and healthy accompaniment to any dinner in the fall. It is honestly one of my favorite things this time of the year. I make it often because it is so simple and good yet requires little time. This is something similar to salads I have enjoyed in restaurants, but it is way cheaper to make at home. The version I am sharing with you today contains honey crisp apples, which happen to be a favorite, but you feel free to use your favorite. I combine them with lettuce, shallots, and pumpkin seeds which are high in magnesium and zinc.

Pre heat the oven to 350 degrees, and line a sheet pan with foil. Toss the pumpkin seeds with the maple syrup, sea salt, cinnamon, chipotle powder, and coconut sugar and spread out on the sheet pan. Toast in the oven for 10-15 minutes or until golden brown. Remove from oven and let cool. Meanwhile, whisk together the apple cider vinegar, olive oil, maple syrup, sea salt and thyme. Combine the lettuce, apples, shallots, prepared seeds, and dressing in a bowl, and toss to coat. Serve!
