Hot Honey Oven Wings

To make sauce, combine hot honey sauce ingredients in a small sauce pan over medium heat. Bring to a boil, whisking to prevent scorching, then remove from heat.
For wings, save wing tips for making stock. Preheat oven to 415°. Line 1 large, or two smaller rimmed baking sheets with foil. Set a wire rack inside each of the baking sheets. In a large bowl, combine the wings, oil, and seasonings; toss to coat. Spread wings out on the wire racks in a single layer. Bake until cooked fully and skin is crispy, approximately 45 minutes.
Combine the cooked chicken wings and the Hot Honey sauce in a large bowl; toss to coat. Spread coated wings out on wire rack in a single layer and return to the oven. Bake until Hot Honey glaze is glossy and caramelized, 5-8 minutes. Toss wings with remaining sauce.
Combine all of the cilantro-ranch dressing ingredients, serve with wings.
