Kickin Cajun Chicken

This weeks recipe is one of the simplest fix it and forget it dinners I’ve ever made. A pre-cut chicken saves time for busy families! I tried seasoning the chicken and vegetables with Cajun seasoning and a chicken bouillon cube for extra flavor and the payoff was amazing! This dinner took less than one hour to cook and it is now a family favorite!

Preheat oven to 450 degrees. In a large roasting pan place the chicken, potatoes and garlic and drizzle 1-2 tablespoons over everything then season with salt and pepper, bouillon and Cajun seasoning.
Roast in the oven for 20-25 minutes remove and lower the temp to 375 degrees. Add the red onion and red bell pepper and bake for an additional 20-25 minutes. (Check temp on all chicken pieces they should be at 165 degrees.)
Allow to rest 5 minutes and serve.
