Lemony Spring Pasta Salad
Going gluten free doesn’t have to mean giving up pastas. There are plenty of good options out there nowadays that taste good. I like to look for pastas that contain quinoa because I like the flavor and I know I am not just getting processed ingredients. Tru Roots makes a nice one. The recipe I am sharing with you today is super simple. It is a pasta salad that comes together in 15 minutes, with some of my favorite spring veggies and some lemon and mint for freshness. This can be made ahead of time, so it makes a nice lunch to bring along to work with you.

Cook the pasta according to package directions. Combine all ingredients in a large bowl and toss together. Serve at room temperature.
