Christmas cookies and treats do not have to be unhealthy and loaded with refined sugars and flours. There many you can make yourself at home that are made with quality healthy ingredients. The recipe I am sharing with you today doesn’t even have to be baked and it comes together in less than an hour, only about 20 minutes actual hands on time. It is a recipe for Marzipan Snowballs. I have always been a fan or marzipan, and coconut, so I love these! They taste sweet and delicious but really don’t require much sweeteners thanks to the sweet almonds and coconut, plus they have a bit of protein and fiber. Nothing beats dessert with benefits!

In a high speed blender or food processor, buzz the shredded coconut to fine flour (only about 15-30 seconds in a high speed blender, do not do it too long or you will get butter). Set aside in a bowl. To a food processor, add the almond butter, coconut butter, maple syrup, sea salt, extracts, and water and blend until smooth. Add the reserved coconut and process until smooth like dough. Roll into 12 little balls, then dip them into the shredded coconut, rolling them to coat. Place then on a tray and freeze until firm, about 30 minutes.
