Mushroom Kale “Rice” Salad

Celeriac is not a well known vegetable, but if you have never tried it you should because it is really delicious when prepared properly.  People like to mash it like potatoes and use it in soups, but I have found that when used raw it is a great grain free rice substitute!  It tastes more like real rice than cauliflower which is all the rage when it comes to faux rice.  Celeriac has kind of a nutty flavor and is perfect for adding more dominant flavors to, like garlic and herbs.  So, if you are on a grain free or raw diet, or just trying to get in more raw veggies, this is perfect for filling you up without making you feel heavy.

Instructions

  1. Pulse the celeriac in a food processor until you have small pieces like rice.
  2. Combine with all ingredients in a large bowl, and mix well.
  3. Serve at room temperature.
