Parsnip Apple Slaw

If you are looking for a new Fall and Winter salad recipe, consider this Parsnip and Apple Slaw!  I mean, cabbage gets all of the attention when it comes to slaw, and there are plenty of other seasonal veggies out there that are delicious shredded! Parsnips have a sweet flavor, and a texture similar to carrots but a little softer.  They pair perfect with tart sweet apples like the Honeycrisp.  In this salad I combine them with a tangy dressing and crunchy hazelnuts and it is a refreshing and delicious side for a heartier main course. It is delicious, good for you, and no cooking required!  This is also good with lunch the next day, when the flavors have allowed to soak in overnight.  Just give it a stir.

  1. Whisk together all dressing ingredients together in a small bowl until combined.
  2. Combine the apple, parsnips and shallots in a bowl, and toss with the dressing.
  3. Transfer to a serving plate.
  4. Top with the chopped hazelnuts and parsley and serve!
