Peach and Strawberry Arugula Salad

If you are looking for a fast, fresh salad featuring fruit to serve at your next BBQ, such as a 4th of July celebration, this one would be perfect!  It is light and healthy to balance out all of the other rich foods you may be serving, it is packed with nutrients, and super simple and easy to make!  I always love taking advantage of when fresh summer fruits are in season!

  1. Combine the fruit, arugula, green onions and mint in a large bowl.
  2. Whisk together the dressing ingredients.
  3. Pour just enough of the dressing onto the salad to coat it, then toss to combine.
  4. Serve!
