Perch with Cucumber and Potato Salad

It’s now summer and you want a quick meal but one that is light and delicious. So take advantage of Fresh & Natural’s deli and purchase the premade potato salad, then go to the freezer section and select some frozen perch fillets, and round things off by selecting some mixed salad greens and cucumber from the produce section.  This is one tasty meal!

Instructions for pickled cucumber salad:

1. In a small bowl combine cucumber, onion, dill, vinegar, and 1 tsp salt. Let stand for 20 minutes.

Instructions for perch fillets:

  1. in a microwave glass dish, put the perch fillets in with 1 T of lemon juice, dill, salt, and pepper to taste and 1 T of margarine (optional).
  2. Cook in the microwave for about 5 minutes until the fillets are no longer transparent and the fish is flaky.

Pile greens and potato salad on four plates; top with perch and pickled cucumber. So good!
