Pumpkin Spice Granola

Did you know making your own granola at home is easy to do?  Not only that, Fall is the perfect season for it and it fills your home with the most heavenly aroma!  I have been making my own granola for over 10 years, and I love it because I can pick my own ingredients and flavors.  The one I am sharing with you today is a pumpkin spice granola and it is filled with good things.  It is packed with fiber and protein, and is delicious for a snack on its own, or over yogurt or fresh fruit.  Feel free to play around with the add ins and tailor it to your tastes!

Line a large baking sheet with non-stick foil. Preheat the oven to 350 and set rack at the medium position. In a large bowl, combine oats, walnuts, almonds, and coconut, and set aside. In another bowl, whisk together oil, maple syrup, pumpkin, sea salt, spices, maple extract, and vanilla extract until well combined, then pour over oat mixture and toss to coat until completely blended. Pour out onto prepared baking sheet, and spread out evenly. Bake for 35 minutes, stirring about every 10 minutes or so until the granola is evenly browned. Remove from oven and let cool. Stir in dried cranberries, and enjoy!
