Raw Date Caramel

When I was a kid, I loved things like caramel apples and caramel apple dip.  As an adult however, I find refined sugars way too sweet and not kind to my body.  I still enjoy the flavor of caramel however though, so I have a solution to craving caramel, date caramel! It is made from dates to give it sweetness and gooeyness, and it is just as enjoyable as eating regular caramel but without all of the refined sugar.  If your kids like a caramel apple, this your caramel recipe, and for all those mom with dippers, it is even a great for dipping apples.  It can also be thinned out a bit for drizzling over ice cream or even an apple pie or crisp.
