Salmon Fillet
Not only is salmon one of the most flavorful fish but it’sĀ also a healthy protein! Salmon is an excellent source of vitamin B12, vitamin D and also packed with omega 3 fatty acids which means it’s great for your brain and your body! In my house we eat a lot of salmon and sometimes the recipes get a bit boring so I decided to switch it up a little. If your 5 year old tells you “wow mom that looks really delicious” as it comes out of the oven and they clean their plate well I guess it’s a winning recipe!

Preheat oven to 375 degrees. Cut fillet in half and place in a 9 x 13 inch cake pan that you have drizzled with olive oil to keep fillets from sticking. Season fillets with salt and pepper and evenly spread the onions, tomatoes, capers and black olives over the fillets then place the lemon slices over the top of them. Cover with aluminum foil and bake for 25 minutes or until it reaches 145 degrees Fahrenheit. Serve over a small handful of baby spinach drizzled with a little olive oil, lemon and salt and pepper.
